Chinese Style Stir Fry Chicken Fillet Mushroom & Fresh Tomato | Cooking Skinless Chicken Meat Recipe
This is a quick and easy one-pan stir fry chicken recipe with fresh mushroom and tomato. It is a perfect dish to prepare for lunch or dinner. Cooking method is simple and ingredients are easily available in the market.
Here are the ingredients :
2 cloves garlic
half an inch old ginger
2 fresh tomatoes
approx. 250 gm fresh shiitake mushroom
1.5 tsp of minced fermented bean paste (Tau Cheong)
1 tbsp oyster sauce
approx. one cup water
approx. 150 gm chicken fillet
1.5 tbsp cooking oil
Preparation :
1. Peel off garlic skin, slice it and coarsely chop
2. Remove ginger skin and cut into slices
3. Wash tomatoes, remove seeds and cut into slices
4. Wash mushroom, remove stems and cut into 3 parts/slices
5. Wash and pat dry chicken meat, cut into slices. Marinate with one tbsp of light soy sauce and a dash of pepper for about half hour or more.
6. Get ready a clean wok and a spatula
Cooking Method:
1. Heat the wok on low medium flame, add cooking oil and ginger into the wok
2. Add marinated chicken fillet and garlic into the wok once the ginger has release its aroma from the sizzling oil.
3. Add mushroom and tau cheong, continue stir frying to make sure tau cheong and other ingredients are well mixed.
4. Add about a cup of water, close the wok with lid and let it simmer for about 2 minutes then add oyster sauce.
5. Add some water if it is too dry. Let it simmer again for a minute in order for the mushroom to absorb its flavour.
6. Continue stir frying till t is slightly dry, then add tomatoes, stir and mix well but do not over cook it.
It should be cooked by now and ready to serve on a plate.
Serve while it is still hot and it goes well with rice.
